The 13 Foods test kitchen is beyond excited to share this unique combination: pizza dough, BBQ sauce, and Kabuli! Chickpeas. What’s better than a pizza night filled with your favorite summer flavors? It’s so GOOD!

Homemade dough or store bought, there isn’t a wrong way to make this pizza. Our test kitchen took the easy peasy route: pre-made crust and BBQ sauce. Before prepping the layers, we grabbed a bag of Kabuli! Chickpeas and measured a cup and a half. Following the bag’s instructions, the chickpeas were ready to marinate in a flash. The wonderful thing about this recipe is the prep time can be dependent on your schedule. Marinating the chickpeas in your delicious BBQ sauce can only be a quick stir.

There is no need to fire up the grill with this recipe; unless, cooking meat is your forte! Which, might add another flavor to set this dish on fire.

But, if you want to keep things simple like us, follow these simple chopping and tossing steps to create your Mexican Street Pasta Salad in the comfort of your home.

 


 

In our test kitchen, we believe the hardest step is the first step…cooking the noodles. See, this is a simple summer salad. Grab your favorite pasta. Boil your water. Don’t forget to salt that water! Then let them cook. While your letting the pot of water do the work, let’s start making the sauce. Like we said, this salad is simple, so grab a bowl and start measuring. Then, whip it real good! Now, don’t forget about those noodles. Once they’re cooked, drain off the water into the sink and pour your noodles into the bowl. At this point, we like to pour a touch of olive oil and toss with the noodles. This will allow the noodles to not cling onto each other. Now, grab the rest of the ingredients and lets start chopping. Leave those thawed corn kernels off to the side.

Once all the necessary ingredients are chopped, let corn roasting begin! This step is very simple:

  1. Place kernels into medium-high pan.
  2. Pour a teaspoon or two of oil into the pan and toss.
  3. Don’t forget to season with salt and pepper…a pinch or two is perfect!
  4. Now, patients are the key…let them roast [stir every 30 seconds].

Are they roasted enough for your liking? Good. Let’s complete that salad. Place all the ingredients into the bowl and toss!

The other day we went on a scavenger hunt in 13 Foods Mama’s garden. We were able to collect a few beautiful ingredients for this salad with the help of the local market’s stand and grocery store. With a basket full of goodies and Kabuli! Chickpea ready to roast…we began the simple steps of creating a sweetly, tangy sauce for the last step in this salad creation.

Don’t forget to leave a handful of roasted chickpeas aside as your salad styling and hungry tummy will be happy!

 

 

Pour the sauce in intervals as you toss the ingredients together.

This Fresh Mint, Watermelon, and Lentil Salad is the perfect summer salad for any meal! And, the best part? The combination of the sweet watermelon, fresh mint, nutty Pardina! Lentils, salty goat cheese, and sweet balsamic glaze make for an oh-so-tasty flavor!

This salad makes for an easy preparation:

Cut watermelon slices into 1 inch cubes

Finely chop mint leaves

To make the salad, simply toss all the ingredients together to combine but hold that yummy balsamic glaze to the side. The 13 Foods test kitchen loves to use a balsamic vinegar from a local oil and vinegar store, but any glaze or regular balsamic vinegar will work great too!

This month we began to transition our cooking from hearty to light, fresh and flavorful. Here at 13 Foods, we decided to place those big hearty dishes aside during these warm months of the year. Why not enjoy all those fresh fruits and vegetables ripening in your local garden? This week we are bringing you a fresh, but oh-so flavorful dish out of our garden and into your kitchen. It’s perfect for a hot, summery day. It can make an appearance during breakfast, lunch or dinner as a main entrée or a simple side dish. In fact, we used this recipe just this week as a side dish at a Graduation Party picnic- what a treat!

This salad is simple, but filled with beautiful colors of the garden. The grocery list will be small for those who are gardeners at heart. Our scrumptious Pardina! Lentils are the heart of this meal. The basil and tomatoes make the salad pop with color on everyone’s plate. No one will forget that fresh mozzarella- its creamy texture comes alive with every bite! What makes this dish complete? Yes, the tasty balsamic vinegar of your choice. Don’t be afraid to try different flavors from your local Oil & Vinegar shop; the colors will still pop and the flavors can be appropriately paired to your main dish.

Our test kitchen has given you a step by step guide on how to make this flavorful, summery dish. Don’t be afraid to bring extra color and flavors from different varieties of tomatoes and vinegar!

 

In a bowl, mix olive oil, minced garlic, red wine vinegar, salt, and pepper.

Add and toss Pardina! Lentils to the oil mixture.

Add and toss quartered tomatoes, chopped shallot, chopped basil, and cubed mozzarella with lentil mixture. 

Drizzle balsamic vinegar into salad and toss.

Many of us have joined the trend to eat healthy snacks. Hummus is on this list among many others. It ranks high on our list because of its simplicity and versatility. That’s why this dish is a favorite from our test kitchen and hopefully your family’s too. Many of us love to keep some on hand for easy access during our traditionally hectic week.

Tenderly Love Hummus Chicken

A simple chicken breast gets topped with hummus to create a moist and tender entrée for a weeknight’s dinner.

Better yet this recipe only takes 30 minutes top to prepare and bake. Follow these simple steps….

First, make sure you have “Spread the Love” Hummus {click here for recipe}.

Second, slightly pound the chicken tenderloin to create tenderness.

Next, salt and pepper both sides of each chicken piece. Don’t forget to turn on the oven before your hands get a little messy!

This next step is where “Spread the Love” Hummus comes to play. Dip both sides of the chicken in a bowl full of the hummus.

Then simply place on a lined baking sheet.

Sprinkle a couple of pinches of paprika on each chicken. Place them into the oven for 20 minutes or until fully cooked.

BBQ sauce, pulled pork, and beans stuffed into one bowl. This recipe can be yours to play with. What do we mean by this? The recipe isn’t tailored to a specific sauce, use your favorite. Some of our favorites are from Texas! Get it? Beans and meat with Texas BBQ sauce…yes, that right, we’re calling this bowl our Tex-Mex Protein Bowl. Once you’ve found your pulled pork and BBQ sauce, your set to make this bowl. Whip out those frozen beans from your freezer and rice from the cooker because it’s layering time! This protein bowl has a base of regular white rice, but if you want to use quinoa or brown rice instead? Go for it! Layer the rice on the bottom of the bowl as this is your meal’s starch.
