Hello, FALL!

 

Today is the first official day of Fall! Although we are sad to say goodbye to those sweet summer days, our team is excited to welcome in the new season.

This morning our test kitchen echoed with laughter and cheer as it was team bonding day at the office. We began our Friday morning by combining all our favorite flavors of fall: sweet potatoes, tomatoes, onion, garlic, chili powder, and of course, our easy-peasy frozen beans. With all hands-on-deck to help with the chopping, a big pot of chili was on its way to flavor town. By lunchtime, we came filing into the kitchen to share some stories of the week and a bowl full of chili. Gathering together with comfort and joy was the best way to celebrate the transition from summer to fall.

Sweet & Saucy Chili

 

Sweet & Saucy Chili

Ingredients

1 cup Tortuga! Black Beans*

1/2 cup Pardina! Lentils*

1/2 cup Rojo! Red Beans*

1 tbsp olive oil

1 medium onion, chopped

2 medium sweet potatoes, cubed

4 garlic cloves, minced

2 tbsp chili powder

2 tsp ground cumin

2 tsp chipotle powder

1/4 tsp salt

2 cups water

1/4 lb ground meat (optional)

14 oz diced tomatoes

1 small lime juice

Preparation

  1. Cook onion, garlic, and ground meat until browned (optional)
  2. Add our delicious lentils, red beans, and black beans to diced tomatoes, diced sweet potatoes, chili powder, cumin, chipotle powder, salt, lime juice, and water. Bring to boil, and simmer for 10-20 minutes or until sweet potatoes are cooked.
  3. Serve topped with shredded cheese and a dollop of sour cream.
  4. Weeknight meal: In the morning, place all chili ingredients in an electric cooking pot, set on low. By dinnertime, you’ll have a tasty meal ready to be devoured.
