Kick your day off right with this protein filled monster muffin. This muffin will give you great energy for the rest of the day.

Ingredients

1 cup thawed 13 Foods Kabuli! Chickpeas *
2 chopped ripened bananas
1 cup peanut butter
5-6 tbsp honey
2 tbsp vanilla extract
¼ tsp ground cinnamon
2 eggs
1/8 tsp salt
1 tbsp coconut oil
½ tsp baking soda
½ cup chocolate chip optional

Preparation

  • Preheat oven to 350° F.
  • Place thawed chickpeas and melted coconut oil in food processor/bleaker. Purée until mixture is smooth.
  • Blend purée chickpeas with chopped banana, honey, vanilla extract, cinnamon, eggs, baking soda, and salt.
  • Blend mixture with peanut butter.
  • Fold in chocolate chips.
  • Grease muffin pan and distribute mixture. Cook for 17 to 20 minutes. Enjoy!
