Sometime a sweet treat can be healthy. Kabuli! Chickpeas and peanut butter bring protein and fiber to these oh, so yummy truffles. This Peanut Butter Protein Truffle recipe will stop your sweet cravings in just one bite without completely wrecking your diet.

Serves 12


2 cups 13 Foods Kabuli! Chickpeas*
1 cup peanut butter, smooth
1/2 cup agave, to taste
3/4 tsp cinnamon
1 1/2 tsp vanilla extra
1/4 tsp salt
1 3/4 cup all-purpose flour
1/2 cup cocoa nibs

Chocolate Coating
12 oz bag milk chocolate chips
1 tbsp shortening


  • In your food processor, add our flavorful chickpeas, peanut butter, and honey. Blend until smooth.
  • Add cinnamon, vanilla extract, salt, and flour into chickpeas mixture. Blend until mixture looks like cookie dough. Add extra flour if needed.
  • Fold in cocoa nibs.
  • Use a tablespoon scoop, scoop out the dough and roll to form a ball. Place on baking sheet with parchment paper. Chill in freezer for 15 minutes.
  • Melt chocolate chips and shortening per package. Dip each dough ball into chocolate coating and place onto baking sheet to set; sprinkle of desire.
  • Store in freezer.
