This fresh and healthy lentil salad is filled with classic flavors of a traditional Caprese. Enjoy this salad on a hot, summery day!


Serves 4-6


1 cup 13 Foods Pardina! Lentils*
2 Tbsp olive oil
10 oz cherry tomatoes, quartered
2 Tbsp fresh chopped basil
½ medium shallot, diced
Fresh mozzarella, cubed
1/3 cup Balsamic vinegar
1 clove garlic
Pinch of salt and pepper
1 ½ tsp red wine vinegar (optional)


  • In a bowl, combine and mix olive oil, red wine vinegar, salt, and pepper to create vinaigrette.
  • Add and toss Pardina! Lentils* into vinaigrette.
  • Add tomatoes, mozzarella, and basil to lentil mixture. Toss to combine.
  • Drizzle and toss balsamic vinegar to top the salad. Serve cold. Enjoy!
