This beautiful, simple salad makes for a refreshing side salad or dessert for any hot summer’s day! 

Serves 4-6


3 cup watermelon, cubed
1 cup 13 Foods Pardina! Lentils
¼ cup fresh mint, finely chopped
¼ – ½ cup goat cheese, crumbled
1 – 2 Tbsp Balsamic Vinegar Glaze


  • In a large bowl, combine and toss watermelon, lentils, mint, and cheese.
  • Place in serving dish and drizzle balsamic glaze on top of salad. Sprinkle extra cheese and mint on top to garnish. Enjoy!
