Rice and beans is a staple food around the world. This hearty recipe will bring the taste of the South right into your kitchen. Simply make this recipe your own by using a bean mix of red beans, black beans, or chickpeas.

Ingredients

4 cups Rojo! Red Beans *
1 pound ground sausage
2 tbs oil
1 onion, chopped
2 celery stalks, chopped
2 garlic cloves, minced
1 sweet pepper, chopped
1 ½ cups plum tomatoes, chopped
¼ cup Pickapeppa sauce or mango salsa
¼ cup cilantro, chopped
2 green onions, sliced
Steamed rice, for serving

Preparation

  • Sauté sausage, onion, celery, and garlic in oil until cooked and vegetables are golden.
  • Add beans, pepper, tomatoes, sauce and bring to a simmer. Turn heat to low and cook for 1 hour until thickened.
  • Serve hot over rice sprinkled with cilantro or green onion.
