2 cups (280 g) 13 Foods frozen lentils*
4 Tbsp (60 ml) olive oil
3 Tbsp (45 mL) red wine vinegar
⅛ tsp (0.5 g) black pepper, ground
¼ tsp (1.5 g) salt
1 tsp (1 g) dried Italian seasoning
2 heaping Tbsp (30 mL) sun-dried tomatoes with their oil, julienned
½ 14-oz can (200 g) quartered artichoke hearts
1 cup (40 g) fresh basil, finely chopped
1 oz (30 g) Parmesan cheese, shaved
2 6-oz (340 g) chicken breasts, grilled and sliced
1 cup (20 g) arugula, loosely packed
- In a large bowl, mix oil, vinegar, black pepper, salt and seasoning to make the vinaigrette. Stir in our yummy lentils and let set for at least 15 minutes.
- Stir in sun-dried tomatoes, artichoke hearts, basil, Parmesan and chicken.
- Serve on a bed of arugula.
*Cook according to package directions.
