Luscious and lentil both begin with “L.” Coincidence? We think not. This super simple, super tasty salad will have you wondering why you haven’t made this dish more often. After you serve it to your friends and family, you may just have to.

Serves 6 as entrée


2 cups (280 g) 13 Foods frozen lentils*
4 Tbsp (60 ml) olive oil
3 Tbsp (45 mL) red wine vinegar
⅛ tsp (0.5 g) black pepper, ground
¼ tsp (1.5 g) salt
1 tsp (1 g) dried Italian seasoning
2 heaping Tbsp (30 mL) sun-dried tomatoes with their oil, julienned
½ 14-oz can (200 g) quartered artichoke hearts
1 cup (40 g) fresh basil, finely chopped
1 oz (30 g) Parmesan cheese, shaved
2 6-oz (340 g) chicken breasts, grilled and sliced
1 cup (20 g) arugula, loosely packed


  • In a large bowl, mix oil, vinegar, black pepper, salt and seasoning to make the vinaigrette. Stir in our yummy lentils and let set for at least 15 minutes.
  • Stir in sun-dried tomatoes, artichoke hearts, basil, Parmesan and chicken.
  • Serve on a bed of arugula.

*Cook according to package directions.
