Hello, FALL!

Today is the first official day of Fall! Although we are sad to say goodbye to those sweet summer days, our team is excited to welcome in the new season.

This morning our test kitchen echoed with laughter and cheer as it was team bonding day at the office. We began our Friday morning by combining all our favorite flavors of fall: sweet potatoes, tomatoes, onion, garlic, chili powder, and of course, our easy-peasy frozen beans. With all hands-on-deck to help with the chopping, a big pot of chili was on its way to flavor town. By lunchtime, we came filing into the kitchen to share some stories of the week and a bowl full of chili. Gathering together with comfort and joy was the best way to celebrate the transition from summer to fall.

We hope the combination of these flavors brings you comfort with family and friends this season!

Simple Living…

…How to live a simple life…Simple Living…Create new habits to live a simple life…

Today we have more how-tos and tutorials on living a simple life than years before. Have we as a society become so busy that we need to learn how to live a simpler life?

By definition {Webster Dictionary}, simple is becoming free from one’s vanities, display, or being modest. But this description isn’t telling us how to simplify our lives or what is a simple life? Is this why we devour all those articles on how to be simple? Or, constantly grasp to any object or way to conquer this daily struggle?

At 13 Foods, we led this conversation by asking what is simple living to you? Each and every one of the team had their own version, but each version had one common explanation, it’s a lifestyle. To begin implementing this way of life, you must change your routines and paradigm, such as the way you shop. These how-to articles aren’t explaining how much effort it takes to become a simple living person. The “pruning” or modifications take time. And, if you’re not a patient person, this can be hard.  Would you be willing to test your patience and change your lifestyle for a new simpler life? Only you can answer.

Our Bean Team took this risk to not only have a simpler process to cook but a healthier way to cook too. It was a lifestyle change. We chose to shop, cook, and eat differently after finding a solution to no additives and preservatives ready-to-use beans. Our famous frozen beans! In the end, we too were able to live a healthy, simple life because of our choices.

How are these beans a lifestyle change? It’s ironically simple. It changes the way we shop at the grocery store. No need to head to the canned food aisle or dry food aisle, head to the freezers! And better yet, our bag of beans holds more than an average can – a 1 pound bag of beans and only beans. This means fewer trips to the grocery store for your next chili creation. Also, it changes the way you store and cook with beans. They save room in your cupboards and allows you to use a bag multiple times because of its handy zip-lock on top. With these lifestyle changes, our team strongly believes that our frozen beans could simplify your life in multiple avenues.

Are you ready to implement this change for more time with your friends and family? Our team was! Now it’s up to you to decide.

This coming month we will continue the living simple topic through recipes, grocery shopping tips, and cooking tricks. We hope to become a positive influence in your World as you join this simple living journey with us.

Greek Salad

This dish is opposite of neat and tidy. It’s all about the slice and dice: chunky tomatoes and cucumbers as the base. We left that boring lettuce behind for this salad; most authentic Greek salads do not involve it anyway. Elevate your dish with a gorgeous mix of
artisan heirloom tomatoes.

Today, we are focusing on a simplistic, but oh-so-delicious Greek salad. It involves a knife, cutting board, bowls and the ingredients. Yes, that’s right! No use of the grill, oven, nor stovetop in this meal prep. Easy Peasy, y’all!

Are you ready? Let’s go! Whip out those ingredients from the cooled pantry [refrigerator & freezer] and dry pantry:

Salad

1 cup Kabuli! Chickpeas

1 cup Cucumbers

1 cup Cherry tomatoes

½ Red Onion, chopped

½ cup Pitted Kalamata Olives (optional)

½ cup Feta

Dressing

¼ cup Olive Oil

2 Tbsp Red Wine Vinegar

1 Juice of a Lemon

1 tsp Sugar, to taste

½ tsp Garlic, minced

1 tsp Oregano, dried

1 tsp Parsley, dried

½ tsp Salt

½ tsp Pepper

Now, let’s get to chopping those cucumbers, tomatoes, and onion!

Greek Salad

Place them into a bowl for mixing. Measure and pour those Kabuli! Chickpeas into the same bowl. But first, make sure you follow the bag instructions!

Greek Salad

How did that go?

Easy?

Good!

Let’s start on the dressing!

Pour and whip the ingredients together in a separate bowl: oil, vinegar, lemon juice, minced garlic, dried oregano, parsley, salt and pepper. You’re going to add a touch of sweetness to this vinegar dressing. No one wants the vinegar bite in every mouth full of salad they eat!

Greek Salad

This is the fun step! Use your creativity…please don’t measure, just sprinkle! A whole lot of sprinkling of feta cheese.

A summer salad packed with pasta, roasted corn, creamy avocados, nutty Tortuga! Black Beans, and spicy-lime sauce is the perfect twist to your normal Mexican Street Corn recipe.

A summer salad packed with pasta, roasted corn, creamy avocados, nutty Tortuga! Black Beans, and spicy-lime sauce is the perfect twist to your normal Mexican Street Corn recipe. There is no need to fire up the grill with this recipe; unless, cooking meat is your forte! Which, might add another flavor to set this dish on fire.

But, if you want to keep things simple like us, follow these simple chopping and tossing steps to create your Mexican Street Pasta Salad in the comfort of your home.

In our test kitchen, we believe the hardest step is the first step…cooking the noodles. See, this is a simple summer salad. Grab your favorite pasta. Boil your water. Don’t forget to salt that water! Then let them cook. While your letting the pot of water do the work, let’s start making the sauce. Like we said, this salad is simple, so grab a bowl and start measuring. Then, whip it real good! Now, don’t forget about those noodles. Once they’re cooked, drain off the water into the sink and pour your noodles into the bowl. At this point, we like to pour a touch of olive oil and toss with the noodles. This will allow the noodles to not cling onto each other. Now, grab the rest of the ingredients and lets start chopping. Leave those thawed corn kernels off to the side.

Mexican Street Pasta Salad

Once all the necessary ingredients are chopped, let corn roasting begin! This step is very simple:

  1. Place kernels into medium-high pan.
  2. Pour a teaspoon or two of oil into the pan and toss.
  3. Don’t forget to season with salt and pepper…a pinch or two is perfect!
  4. Now, patients are the key…let them roast [stir every 30 seconds].

Are they roasted enough for your liking? Good. Let’s complete that salad. Place all the ingredients into the bowl and toss!

TADA! Your simply, delicious salad is complete.

Don’t waste the room on the grill to make Mexican Street Corn when you can create this delicious salad before the meat is off the grill!

The other day we went on a scavenger hunt in 13 Foods Mama’s garden. We were able to collect a few beautiful ingredients for this salad with the help of the local market’s stand and grocery store. With a basket full of goodies and Kabuli! Chickpea ready to roast…we began the simple steps of creating a sweetly, tangy sauce for the last step in this salad creation.

After the chickpeas were placed in the oven, we began the simple steps of creating a sweetly, tangy sauce for the last step in this salad creation.

Once Kabuli! Chickpeas are roasted, sauce is made, and ingredients are chopped, we…

Combined all the ingredients!

Don’t forget to leave a handful of roasted chickpeas aside as your salad styling and hungry tummy will be happy!

Pour the sauce in intervals as you toss the ingredients together.

Grab a few of those roasted chickpeas to sprinkle on top.

Delicious! An easy, fool-proof summer salad!

This dish can stand alone as a delicious side dish or with the addition of extra chickpeas or grilled chicken, can make a fantastic lunch or dinner salad. It’s a wonderful way to incorporate all those fruits and vegetables from your summer garden.
