Happy Memorial Day Weekend!
We hope you find time to relax and celebrate this long weekend with friends, family, and most importantly tasty food! Many of us have been counting down the days until this weekend. And, how close are we? That’s right, ONE more day! Memorial Day Weekend gives excitement to all as school sessions are ending and the weather is warmer, which means…
It’s finally Summer time!
Pull out those cutting boards and knifes because summer time means it’s watermelon season!
Have you been on the search for the perfect Memorial Day BBQ salad? Well, we have a simple and refreshing salad for you! This Fresh Mint, Watermelon, and Lentil Salad is the perfect summer salad for any meal! And, the best part? The combination of the sweet watermelon, fresh mint, nutty Pardina! Lentils, salty goat cheese, and sweet balsamic glaze make for an oh-so-tasty flavor!
This salad makes for an easy preparation:
Cut watermelon slices into 1 inch cubes
Finely chop mint leaves
Prepare our delicious Pardina! Lentils
Don’t forget to taste test your watermelon slices!
To make the salad, simply toss all the ingredients together to combine but hold that yummy balsamic glaze to the side. The 13 Foods test kitchen loves to use a balsamic vinegar from a local oil and vinegar store, but any glaze or regular balsamic vinegar will work great too!
Place your salad onto a pretty contrast plate; we used a black textured platter. To finish, top your salad by drizzling your sweet balsamic glaze!
That’s it! Summer’s PERFECT salad!
Have a tasty (and safe) Memorial Day Weekend!
