Mediterranean Breakfast Burrito

This Mediterranean Breakfast Burrito is a savory twist on your classic breakfast burrito. It’s a scrumptious change from the usual egg dish and it’s simple to make.

Ingredients

2 tbsp 13 Foods Pardina! Lentils*

1 Tortilla

1 Egg

2 Baby Portabella Mushrooms, diced

1 tbsp Ricotta Cheese

2 tsp Fresh Rosemary, minced

Splash of Milk

2 tbsp Hummus

1 Garlic Clove, minced

Preparation

  • In a large saucepan, toast the tortilla on both sides.
  • In a small bowl, whip egg, lentils, rosemary, ricotta cheese, garlic, and milk.
  • In a saucepan, cook diced mushrooms.
  • Once mushroom is cooked, pour egg mixture into the pan with mushroom. Scramble.
  • Spread hummus on one side of the tortilla.
  • Top layered hummus tortilla with egg scramble. Fold, roll, and enjoy!

Hello, FALL!

 

Today is the first official day of Fall! Although we are sad to say goodbye to those sweet summer days, our team is excited to welcome in the new season.

This morning our test kitchen echoed with laughter and cheer as it was team bonding day at the office. We began our Friday morning by combining all our favorite flavors of fall: sweet potatoes, tomatoes, onion, garlic, chili powder, and of course, our easy-peasy frozen beans. With all hands-on-deck to help with the chopping, a big pot of chili was on its way to flavor town. By lunchtime, we came filing into the kitchen to share some stories of the week and a bowl full of chili. Gathering together with comfort and joy was the best way to celebrate the transition from summer to fall.

We hope the combination of these flavors brings you comfort with family and friends this season!

 

 

Sweet & Saucy Chili

 

Sweet & Saucy Chili

Ingredients

1 cup Tortuga! Black Beans*

1/2 cup Pardina! Lentils*

1/2 cup Rojo! Red Beans*

1 tbsp olive oil

1 medium onion, chopped

2 medium sweet potatoes, cubed

4 garlic cloves, minced

2 tbsp chili powder

2 tsp ground cumin

2 tsp chipotle powder

1/4 tsp salt

2 cups water

1/4 lb ground meat (optional)

14 oz diced tomatoes

1 small lime juice

Preparation

  1. Cook onion, garlic, and ground meat until browned (optional)
  2. Add our delicious lentils, red beans, and black beans to diced tomatoes, diced sweet potatoes, chili powder, cumin, chipotle powder, salt, lime juice, and water. Bring to boil, and simmer for 10-20 minutes or until sweet potatoes are cooked.
  3. Serve topped with shredded cheese and a dollop of sour cream.
  4. Weeknight meal: In the morning, place all chili ingredients in an electric cooking pot, set on low. By dinnertime, you’ll have a tasty meal ready to be devoured.

First, you’ll need to gather all the ingredients that should be stock in the freezer, refrigerator, and pantry. Throw all the measured amounts into a food processor or blender all at once. Chop and blend until mixture is completely creamy. An additional amount of water might be necessary. Snatch a spoonful to make a delicious on-the-go snack before storing it away. Scoop this delicious spread onto a toasted piece of bread. Complete! A tasty meal or snack on-the-go.

INGREDIENTS

2 cups 13 Foods Kabuli! Chickpeas*

2 medium avocados

3-4 roasted garlic cloves, mashed

¼ cup warm water

3 tbsp lemon juice

2 tbsp tahini

1/2 Tsp ground cumin

¼ Tsp salt to taste

4 tbsp oil

sliced bread loaf

  *Cook according to package directions.

PREPARATION

Place all ingredients into blender or food processor. Blend until completely smooth and creamy. If the texture is too thick, add additional olive oil and blend.

Toast bread slices and top with Hummus-Avocado Spread.

**Optional: Sprinkle additional toppings before serving.

Today we have more how-tos and tutorials on living a simple life than years before. Have we as a society become so busy that we need to learn how to live a simpler life? 

By definition {Webster Dictionary}, simple is becoming free from one’s vanities, display, or being modest. But this description isn’t telling us how to simplify our lives or what is a simple life? Is this why we devour all those articles on how to be simple? Or, constantly grasp to any object or way to conquer this daily struggle?

At 13 Foods, we led this conversation by asking what is simple living to you? Each and every one of the team had their own version, but each version had one common explanation, it’s a lifestyle. To begin implementing this way of life, you must change your routines and paradigm, such as the way you shop. These how-to articles aren’t explaining how much effort it takes to become a simple living person. The “pruning” or modifications take time. And, if you’re not a patient person, this can be hard.  Would you be willing to test your patience and change your lifestyle for a new simpler life? Only you can answer.

Our Bean Team took this risk to not only have a simpler process to cook but a healthier way to cook too. It was a lifestyle change. We chose to shop, cook, and eat differently after finding a solution to no additives and preservatives ready-to-use beans. Our famous frozen beans! In the end, we too were able to live a healthy, simple life because of our choices.

How are these beans a lifestyle change? It’s ironically simple. It changes the way we shop at the grocery store. No need to head to the canned food aisle or dry food aisle, head to the freezers! There is no need to create multiple desserts for your next gathering as everyone can enjoy this simple recipe.

These cookie bites are made with our flavorful, nutty Kabuli! Chickpeas, peanut butter, maple syrup or agave syrup, and chocolate chips. They’re so easy peasy to whip up that they’re perfect for a last-minute treat! Your mouth will be savoring every bite within twenty minutes or less. Yes, please!

Chickpea Peanut Butter Cookie Bites

So, have you ever thought to create them in your very own home?

 

Why do we look the other way when it comes to creating a homemade falafel? Is it too hard? Is it the deep-frying? Well, it’s time! Time to make something you’ve never thought you could create. Follow our easy peasy recipe, with minimal effort and time…

Traditionally, falafels were made with fava beans and fried to make a delectable crispy coat but today we are mastering the falafel with the goodness of chickpeas. No need to test out those deep-frying skills because turning on your oven might be the hardest step!

To start on your first falafel making experience, pick up the following ingredients:

1 ½ cup Kabuli! Chickpeas*

½ cup onion

½ Tsp salt

3 tbsp olive oil

½ cup packed parsley leaves

¼ cup cilantro

3 garlic cloves

½ Tsp cumin

1 tsp coriander

½ Tsp baking powder

1 tsp lemon juice

For the next step a food processor or blender may come in handy, but it isn’t a must. If you are without those appliances, just grab a fork or a potato masher and use some elbow grease for the alternative. Blend all ingredients together until our Kabuli! Chickpeas are chopped and thoroughly mixed with all ingredients. Next, create small patties from the dough, roughly 2″ wide, and place onto a non-stick baking sheet. Bake these delicious treats for fifteen minutes, at 375° F,  then flip and bake another ten minutes. Let the patties rest for five minutes as you prepare your pita toppings. You’ll know they’re done in the oven when they start to have a beautiful crispy look.

Our test kitchen loves to whip up these oh-so-yummy treats for lunch with toppings from the garden and pitas from our local bakery. Don’t forget to find your favorite tahini dressing from your local grocery store too.

This sweetly, tangy BBQ Chickpea Pizza contains loads of flavor and, better yet, takes just minutes to put together.

The 13 Foods test kitchen is beyond excited to share this unique combination: pizza dough, BBQ sauce, and Kabuli! Chickpeas. What’s better than a pizza night filled with your favorite summer flavors? It’s so GOOD!

Homemade dough or store bought, there isn’t a wrong way to make this pizza. Our test kitchen took the easy peasy route: pre-made crust and BBQ sauce. Before prepping the layers, we grabbed a bag of Kabuli! Chickpeas and measured a cup and a half. Following the bag’s instructions, the chickpeas were ready to marinate in a flash. The wonderful thing about this recipe is the prep time can be dependent on your schedule. Marinating the chickpeas in your delicious BBQ sauce can only be a quick stir.

Frozen Beans? Well, if you haven’t heard of about these magical beans, you’re in the right spot!
