 Whether creating a simple menu or a request for your guests to bring their favorite side dish of the summer, celebrating Independence Day shouldn’t be stressful!  As we all know, it’s often the largest get-together with family and friends of the Summer season.  We often take this day to enjoy the outdoor grill and fireworks with good food and drinks all around.

Greek Salad

 

This dish is opposite of neat and tidy. It’s all about the slice and dice: chunky tomatoes and cucumbers as the base. We left that boring lettuce behind for this salad; most authentic Greek salads do not involve it anyway. Elevate your dish with a gorgeous mix of
artisan heirloom tomatoes. 

Today, we are focusing on a simplistic, but oh-so-delicious Greek salad. It involves a knife, cutting board, bowls and the ingredients. Yes, that’s right! No use of the grill, oven, nor stovetop in this meal prep. Easy Peasy, y’all!

Are you ready? Let’s go! Whip out those ingredients from the cooled pantry [refrigerator & freezer] and dry pantry:

 


Salad

1 cup Kabuli! Chickpeas

1 cup Cucumbers

1 cup Cherry tomatoes

½ Red Onion, chopped

½ cup Pitted Kalamata Olives (optional)

½ cup Feta

Dressing

¼ cup Olive Oil

2 Tbsp Red Wine Vinegar

1 Juice of a Lemon

1 tsp Sugar, to taste

½ tsp Garlic, minced

1 tsp Oregano, dried

1 tsp Parsley, dried

½ tsp Salt

½ tsp Pepper


 

Now, let’s get to chopping those cucumbers, tomatoes, and onion!

Place them into a bowl for mixing. Measure and pour those Kabuli! Chickpeas into the same bowl. But first, make sure you follow the bag instructions!

Let’s start on the dressing!

Pour and whip the ingredients together in a separate bowl: oil, vinegar, lemon juice, minced garlic, dried oregano, parsley, salt and pepper. You’re going to add a touch of sweetness to this vinegar dressing. No one wants the vinegar bite in every mouth full of salad they eat!

This is the fun step! Use your creativity…please don’t measure, just sprinkle! A whole lot of sprinkling of feta cheese.

There is no need to fire up the grill with this recipe; unless, cooking meat is your forte! Which, might add another flavor to set this dish on fire.

But, if you want to keep things simple like us, follow these simple chopping and tossing steps to create your Mexican Street Pasta Salad in the comfort of your home.

 


 

In our test kitchen, we believe the hardest step is the first step…cooking the noodles. See, this is a simple summer salad. Grab your favorite pasta. Boil your water. Don’t forget to salt that water! Then let them cook. While your letting the pot of water do the work, let’s start making the sauce. Like we said, this salad is simple, so grab a bowl and start measuring. Then, whip it real good! Now, don’t forget about those noodles. Once they’re cooked, drain off the water into the sink and pour your noodles into the bowl. At this point, we like to pour a touch of olive oil and toss with the noodles. This will allow the noodles to not cling onto each other. Now, grab the rest of the ingredients and lets start chopping. Leave those thawed corn kernels off to the side.

Once all the necessary ingredients are chopped, let corn roasting begin! This step is very simple:

  1. Place kernels into medium-high pan.
  2. Pour a teaspoon or two of oil into the pan and toss.
  3. Don’t forget to season with salt and pepper…a pinch or two is perfect!
  4. Now, patients are the key…let them roast [stir every 30 seconds].

Are they roasted enough for your liking? Good. Let’s complete that salad. Place all the ingredients into the bowl and toss!

The other day we went on a scavenger hunt in 13 Foods Mama’s garden. We were able to collect a few beautiful ingredients for this salad with the help of the local market’s stand and grocery store. With a basket full of goodies and Kabuli! Chickpea ready to roast…we began the simple steps of creating a sweetly, tangy sauce for the last step in this salad creation.

Don’t forget to leave a handful of roasted chickpeas aside as your salad styling and hungry tummy will be happy!

 

 

Pour the sauce in intervals as you toss the ingredients together.

 

 

Grab a few of those roasted chickpeas to sprinkle on top.
